Frequently asked questions

What is a Chinese brine (lu shui) used for?
It is a spiced braising liquid — you simmer beef shank, chicken, wings, eggs, dried tofu or offal in it, then slice cold or serve warm. Braised-food counters keep a pot going all day.
Can the brine be reused after braising?
Traditionally yes — the pot is kept as a master stock and topped up with a fresh packet as it weakens. Follow each product's instructions for dosing and handling.
Who buys brine bases by the case?
Braised-food counters, delis, restaurants and caterers who run a pot daily, plus resellers stocking an Asian market shelf.
